A Diet for Healthy Eyes!
One of the tests performed during our comprehensive eye exam includes the evaluation of anti-oxidant levels through the Bio-Scan. This machine uses laser spectroscopy to detect caratenoid levels on the skin surface and converts the reading to an anti-oxidant score while taking into account certain variables such as gender, age, ethnicity, and lifestyle habits. Our interest in anti-oxidant levels is largely based on the landmark study (Age-Related Eye Disease Study) that found that large consumption of anti-oxidants and zinc can reduce the risk of progression of age-related macular degeneration by nearly 25%. Foods rich in anti-oxidants include: berries, green leafy vegetables such as spinach, tomatoes while chicken, turkey, and oysters are rich with zinc. While a diet rich in anti-oxidants plays an important role in the maintenance of macular degeneration, a balanced diet according to the Canadian Food Guide also minimizes exacerbation of certain systemic conditions such as hypertension, diabetes, and hypercholesterolemia. For instance, uncontrolled blood pressure, fasting blood glucose and cholesterol levels often result in respective structural changes to the micro-vasculature of the retina. As such, it is imperative that individuals with these conditions are aware of their diet to avoid retinal involvement. Each month we are going to feature a Vitamin or Mineral of the Month and discuss it's importance in eye health and in what foods the nutrient can be found.
