Vitamin E is different from most other nutrients, because it has no known function in metabolism. The primary function is as an anti-oxidant.
VITAMIN E & SIGHT?
Vitamin is has many roles that are essential to human health. In terms of eye-sight, Vitamin E is essential for improving the absorption of Vitamin A, if the dietary intake is too low. Vitamin A allows us to react to changes in brightness and distinguish between different wavelengths of light (see different colours)!
SOURCES OF VITAMIN E:
Vitamin E is wide-spread in the foods that we each. Most comes from the vegetable oils and the products made with them. Example:
-Oils and fats
-Salad dressings, mayonnaise, margarine, shortening, butter
-Whole grains and wheat germ
-Leafy green vegetables and tomatoes
-Nuts and seeds
-Eggs
**Although no single fruit or vegetable contains high levels of vitamin E, by consuming the recommended daily intake of 5-10 servings, you are able ensure adequate intake of the nutrient
